For the Green Kale Pesto, add all ingredients into a blender and blend on high until smooth. Set aside.
Heat the olive oil in a non-stick pan on medium heat.
Add the cherry tomatoes halves, toss with olive oil, a pinch of salt and a pinch of red chilli flakes.
Add spiralised courgette spaghetti, add half kale pesto and saute on medium-high heat for 1-2 minutes, then add in the remaining kale pesto and saute for a further minute.
Divide the mixed greens into two plates, drizzle of olive oil, and add another sprinkle of nutritional yeast.
Finally serve it to your date; that special one who you are trying to impress!
