13 Back to School Healthy Lunchbox Ideas

It seems to have disappeared quicker than a flash, but the school holidays are coming to a close and soon we’ll all be back to military organisation to get everyone to school on time.

One of the easiest thing to slip out of the routine of doing is putting together a packed lunch – it just requires organisation and planning ahead which falls totally off the radar during the summer. 

Luckily there are some very simple healthy lunches you can pop into a box and so we’ve collated easy, healthy lunch recipes for school, which will have your kids motivated all day long.

1. Sweetcorn and tuna pasta salad

A brilliant protein hit and we know that tuna is a frequent crowd pleaser; this is such an easy healthy lunch recipe for kids.

Go for really funky shaped pasta, and mix with some delicious mayonnaise seasoned with salt and pepper, a squeeze of lemon juice, tinned tuna and sweet corn.

This will keep for a few days too, so can really last a few school lunches.

 

2. Turkey and rocket wraps

 

Turkey is a delicious alternative to chicken and works really well alongside a wholemeal wrap and some peppery rocket.

You can either cook turkey breasts yourself and slice up, or buy pre cooked and sliced turkey and wrap it tightly in the wrap with the rocket and a squeeze of sauce of your choice (mayo is good).

 

3. Mini healthy pizza

 

All kids love a pizza and so this is a really quick, bite size version that can be made the night before and enjoyed cold.

It is also an easy lunch for kids to make at home. Take a pitta bread or a ciabatta roll and half it. Spread over some pizza sauce (passata plus some herbs and garlic) and some chunks of ham.

Sprinkle over grated cheese and bake in the oven.

4. BLT star shaped sandwiches

 

A healthy sandwich idea for school, with a twist! And the twist takes very little effort.

Simply create a lovely bacon, lettuce and tomato sandwich and find yourself a big star biscuit cutter.

Cut your sandwich in the shape of a star, and voila!

 

5. Colourful jewelled rice salad

A jewelled salad is so called because of the punchy, bright colours sprinkled throughout. Cook some rice to packet instructions and when cooled down, mix through some lemon juice, salt and pepper and olive oil.

The best part now is you can literally add whatever veg or herbs you like! Tailor it to your children’s tastebuds – perhaps some simple chopped chives, red pepper, sweet corn and peas would do the trick.

Experiment with this one!

 

6. Cheesy pasta salad

 

Another quick and easy lunch idea, simple cheesy pasta.

Let your child pick the pasta shape and let them help you cook it. Once it’s warm, drain and pop back into a saucepan with heaps of butter.

Let your child add the grated cheese and watch it melt! 

 

7. Crunchy crackers with a hummus dip  

 

Find a shop bought hummus or easily make your own by whizzing up chickpeas, tahini, olive oil and some good seasoning!

Pop in a container with some crackers, for a quick healthy lunchbox snack.

 

8. A chargrilled chicken sandwich with mayo

Think of a chicken burger made easy!

All you need to do is chargrill a few chicken breasts, put to one side and sandwich between some soft bread. Squeeze some lemon juice into the mayo for added kick.

 

9. Savoury cheese and chive muffin

 

Never heard of a savoury muffin? Well then, you’re missing out!

Kids love something that’s soft and easy to chew, and you get exactly that with this. And it’s filling too!

Instead of filling your muffins with raspberry or chocolate, opt for cheese and chive and enjoy.

 

10. Heart shaped ham and cheese sandwiches

11. Banana and nut butter

 

Nut butter is a source of many nutrients, so combine this with a banana and you’re onto a winner for a healthy lunch idea.

Chop into chunks and encourage your kids to dip into the creamy nut butter.

 

12. Homemade jelly with fruity chunks

 

Who said jelly is only for parties?

Create your favourite flavour with your children and add some fresh fruit chunks. They will love opening this at school lunchtime.

 

13. Fruit skewers

Make summer last well into autumn, with some punchy fruit skewers.

Layer on strawberry, pineapple, apple and grape for a combo of flavours.
