Oriental Couscous in Mason Jar
Ingredients:
- 100g Couscous
- 1 tsp Harissa
- 1 pepper
- 1 packet of Complete by Juice Plus+ vegetable soup
- 1 handful of chickpeas
- 6 cherry tomatoes
- Handful of arugula
- 8 slices courgette
- A small onion, finely chopped
- ½ lime
Method:
- Mix the couscous, chickpeas, tomatoes, arugula, zucchini and onion in a sealable glass jar (e.g. a mason jar that can hold about 0.75ml to 1L.)
- Season with Harissa and pepper.
- Finally put the lime on top.
At the Office:
- Bring your prepared dish to the office along with the Complete vegetable soup packet.
- When you're ready to eat at the office, squeeze the lime over your meal.
- Prepare the soup with 250ml of boiling water and pour into your dish, so that the couscous is covered.
- Then shake.
- Next let it sit for 20 mins.
- Finally eat!
