As we fast approach Halloween, there is only one fruit, which is in every shop window – the bright orange pumpkin! And contrary to popular belief, yes, the pumpkin is a fruit.
Botanically, it is a fruit, although we know there are heaps of different ways you can cook a pumpkin which make it both sweet and savoury.

1. Stuffed pumpkin
So simple and so wholesome, a baked stuffed pumpkin requires very little prep but reaps plenty of reward in terms of flavour.
Pumpkins work brilliantly stuffed with lightly spiced rice or even cous cous. Scoop out the pumpkin seeds and stuff with your chosen mixture, or slice up the pumpkin to oven roast open.
Make sure you add a punch of colour like cranberries and pistachios. A sprinkling of crunchy walnuts and feta is a great addition.
2. Pumpkin pesto
Homemade pesto is wholly satisfying – so why not try stepping away from the normal basil pesto and try pumpkin?
All you need to do is roast the pumpkin until soft and blitz in a food processor with some olive oil, salt, pepper, almonds, basil and a hard cheese if you wish.

This gluten free pumpkin pie recipe is a great option. Simply find some gluten free roll ready to roll pastry and pop in a tart tin.

A super simple and healthy pumpkin soup recipe! In a saucepan fry off some onions, garlic, sage, nutmeg and pumpkin chunks.
Add pancetta and then some vegetable stock. Bring to boil and then blitz with a hand blender.
