Juice PLUS+ Pumpkin Ginger Soup
Serves 2 people
- 2 packs Juice PLUS + Complete Vegetable Soup
- 1 can of coconut milk
- 1 medium pumpkin
- 1 apple
- 1 medium carrot
- 1 red onion
- 1 piece of ginger
- 2 cloves of garlic
- Drizzle of olive oil
- Pepper & salt
- Preheat oven to 190 ° C / 375 ° F
- Carve the inside of the pumpkin and cut into small pieces.
- Cut up the apple, carrot, onion, ginger and garlic into small pieces as well and place everything on a baking sheet. Drizzle with olive oil then sprinkle a little salt and pepper over everything. Bake for 20 minutes then remove from oven and leave to cool slightly.
- Quickly boil some coconut milk with Juice Plus + Complete Vegetable Soup and add the vegetables from the baking sheet and blend with a blender until a smooth soup results. Stretch with water to achieve the desired consistency.
