Juice PLUS+ Pumpkin Ginger Soup

Serves 2 people


  • 2 packs Juice PLUS + Complete Vegetable Soup
  • 1 can of coconut milk
  • 1 medium pumpkin
  • 1 apple
  • 1 medium carrot
  • 1 red onion
  • 1 piece of ginger
  • 2 cloves of garlic
  • Drizzle of olive oil
  • Pepper & salt


  • Preheat oven to 190 ° C / 375 ° F
  • Carve the inside of the pumpkin and cut into small pieces.
  • Cut up the apple, carrot, onion, ginger and garlic into small pieces as well and place everything on a baking sheet. Drizzle with olive oil then sprinkle a little salt and pepper over everything.  Bake for 20 minutes then remove from oven and leave to cool slightly.
  • Quickly boil some coconut milk with Juice Plus + Complete Vegetable Soup and add the vegetables from the baking sheet and blend with a blender until a smooth soup results. Stretch with water to achieve the desired consistency.
