Winter Meals - Winter Flavours In Your Kitchen

Ready to start a new rendition of that ol’ holiday favourite, With these recipes by your side, and a fresh supply of warm, wintery spices, you’ll soon be humming:

Here are three winter warmer recipes to get you in the mood and have your house smelling lovely with delicious home-cooked meals using wintery flavours and spices. Some of our favourite spices include:

  • Cinnamon
  • Nutmeg
  • Clove
  • Ginger
  • Allspice
  • Orange

 

Imagine the family waking up to the delightful smells of this comforting winter warmer breakfast. One you’ve popped on the night before in a slow cooker. A porridge that starts slowly bubbling away in the middle of the night, filling your home and dreams with wintery loveliness.

 

  • 1 cup steel-cut oats (be sure to use steel-cut oats as they are better for slow cooking)
  • 1 ½ cups coconut milk
  • 1 ½ cups water
  • 2 apples (cored, peeled, diced)
  • 2 tablespoons brown sugar
  • 1 tablespoon coconut oil
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla 
  • 1/4 teaspoon sea salt
  • Handful chopped walnuts, toasted in 1 teaspoon maple syrup

 

1. Brush the inside of your slow cooker with coconut oil. This step is important - so the oats don’t stick to the pot.

2. Add all ingredients to the slow cooker – oats, coconut milk, water, apples, brown sugar, coconut oil, cinnamon, nutmeg, vanilla, and sea salt. Stir to combine well.

3. Cook on low for 5-7 hours, depending on your cooker. Some take longer, and some are faster. 

4. Place in bowls and allow to cool a little - especially if you have little ones. Then top with the toasted maple walnuts and an extra drizzle of maple syrup, if desired.

 

Next is a hearty dinner recipe that continues to bring wintery smells to life at home. Best of all, it’s made in an Instant Pot, melts in your mouth, and can be made any night of the week as it only takes only half an hour to cook!

 

  • 1 tablespoon olive oil
  • 8 slices bacon, diced
  • 750gms cubed beef stew meat
  • Salt and pepper
  • 1 cup red wine
  • 250gms thickly sliced mushrooms (your choice)
  • 2 cups baby carrots
  • ½ cup pickled pearl onions
  • 2 teaspoon dried oregano
  • 1 ½ teaspoon paprika
  • pinch ground cloves
  • pinch ground cinnamon
  • 2 cups beef stock
  • ½ an orange cut into two wedges
  • 2 tablespoon water
  • 2 tablespoon corn starch

 

1. Turn on your Instant Pot to the sauté setting. Once hot, add the olive oil and bacon. Stir bacon until browned and slightly crispy, then transfer to a plate and drain on some kitchen paper. 

2. Add the cubed meat in two batches, seasoning with salt and pepper. Transfer the seared beef to the plate with the bacon.

3. Add the red wine and scrape the bottom of the pot with a wooden spoon. Simmer the red wine for 2-3 minutes, then add the beef and bacon back into the pot.

4. Add the remaining ingredients and stir to combine.

5. Switch the Instant Pot setting to beef/stew setting. Place on the lid, making sure the release valve is in the locked position.

6. Cook the beef in the Instant Pot for 30-35 minutes, making sure it is fork-tender.

7. Once the beef stew has finished cooking, carefully release the steam and take off the lid.

8. Switch back to the sauté setting and combine the water and corn starch in a small cup. Add this mixture to the stew and stir gently.

9. Cook for a few more minutes until the stew has thickened. Then serve the stew by itself or on top of rice, creamy polenta, or mashed potatoes.

 

It couldn’t possibly be the festive season without the house smelling of freshly baked gingerbread cookies, now would it?

As delicious as they are fun to make and the perfect recipe for little ones to get in on the action.

 

  • ½ cup butter (softened)
  • ½ cup brown sugar (firmly packed)
  • ½ cup molasses
  • 1 large egg
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour​ 
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves

1. In a large mixing bowl, beat the butter and sugar together until fluffy.

2. Add the molasses, egg, and vanilla. Beat well.

3. In a separate bowl, sift together the flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves. 

4. Stir into the wet ingredients until well-mixed (your kiddos can help you do this with their hands).

5. Separate the dough into three pieces. Shape into logs and wrap in plastic wrap. Refrigerate at least 1 hour.

7. When ready to bake, remove dough from the fridge and preheat oven to 175 degrees. 

8. Roll dough out to a thickness of ½ cm. Use cookie cutters to make gingerbread people—bake for 8 to 10 minutes.

 9. Allow to cool and then decorate.
