1 tsp Harissa
1 packet of Complete by Juice Plus+ vegetable soup
1 handful of chickpeas
6 cherry tomatoes
Handful of arugula
8 slices courgette
A small onion, finely chopped
Mix the couscous, chickpeas, tomatoes, arugula, zucchini and onion in a sealable glass jar (e.g. a mason jar that can hold about 0.75ml to 1L.)
Season with Harissa and pepper.
Finally put the lime on top.
At the Office:
Bring your prepared dish to the office along with the Complete vegetable soup packet.
When you're ready to eat at the office, squeeze the lime over your meal.
Prepare the soup with 250ml of boiling water and pour into your dish, so that the couscous is covered.
Next let it sit for 20 mins.
