Carve the inside of the pumpkin and cut into small pieces.
Cut up the apple, carrot, onion, ginger and garlic into small pieces as well and place everything on a baking sheet. Drizzle with olive oil then sprinkle a little salt and pepper over everything. Bake for 20 minutes then remove from oven and leave to cool slightly.
Quickly boil some coconut milk with Juice Plus + Complete Vegetable Soup and add the vegetables from the baking sheet and blend with a blender until a smooth soup results. Stretch with water to achieve the desired consistency.
