Let’s talk about Gingerbread!

The internet said that ancient Greeks and Egyptians were the creators of the first gingerbread and used it during special ceremonies. But what I find fun is that the first gingerbread man was created by Queen Elizabeth I, who had gingerbread people prepared in the likeness of her guests! I love the humour and dedication to impress using baked goodies!

Making gingerbread is not for the “bah humbugs” of the world. Gingerbread takes time, patience, creativity, and FUN. I love the smell of the spices while kneading the dough and my favourite part is decorating the gingerbread people in different ways.

After making all the cookies (probably two batches,) you will need a heaping number of friends and family to eat all the cookies. They make great gifts in clever packaging by the way! 

Ways to Enjoy Gingerbread Cookies

  • Eat straight up with a hot tea or morning coffee. 
  • Crumble the cookie on top of a smoothie. 
  • Crush up and use as the base of a mini fruit tart. 
  • Eat as a quick snack before the gym. 
  • Enjoy as a bedtime snack with a good night sleepy time tea. 

Gingerbread Cookies

Makes about 16 cookies (depends on cookie cutter size) 
Calories: 154 

Ingredients:

1 scoop Juice Plus+ Complete Vanilla 
200 g ground almonds 
180 g flour (or rice flour as a gluten-free option) 
Extra flour for dusting 
95 ml maple syrup 
2 tbsp. ground ginger 
1 tsp. of cinnamon 
1 tbsp. coconut oil 
1 tbsp. of chia seeds 
Icing to decorate!  

Tools Needed for this Recipe:

Mixing bowl 
Wooden spoon 
Rolling pin 
Scale 
Sieve to sift the flour 
Baking tray 
Parchment paper 
Cookie cutters, for gingerbread people or holiday shapes 

Directions:

  • Preheat the oven to 180C. 
  • Place baking parchment on couple of baking trays. 
  • Sift the flour so there are no lumps, measure and then place all the ingredients in a bowl. Add 100 ml water and mix until a sticky dough forms.  
  • Sprinkle extra flour on your working surface and rolling pin. 
  • Roll out the dough till it is smooth and about 1-2 cm thick. 
  • Cut out shapes with your cookie cutter and place onto the baking tray. 
  • Bake for about 15 minutes, check, and leave in longer if needed. 
  • When finished, take the cookies out and let cool on baking tray. 
  • Once cooled, decorate with icing, and let the icing set. 
  • Enjoy with a warm holiday beverage.
