Butternut Squash Curry Soup

Going plant-based is easy (okay maybe not that easy!)

 

Being American, I grew up with parents who are Spanish, Italian, Irish and German. The true “melting pot” of cultures in one family. And, in our kitchen, the centre of every meal was meat. Imagine, chicken, steak, ham, pork chops, and roasts on the table every dinner along with side salad and green veg.

Now, I am proud of my mom and dad, that they didn’t cook the S.A.D. diet. (S.A.D. = Standard American Diet – fried foods, convenience, and fast foods.) But even though every meal was well balanced and nutritious, meat was still the main event. Fast forward 40 years, eating meat so much and so often has become less sustainable for our health and the health of our planet. 

Reframe Meat Meals to Plant-based Meals

Planning, shopping, and prepping meals can be daunting AND it’s a lot of work. So often, we just let our brains run on default and cook what we know best and what’s easiest. Our brains are tired. Going plant-based doesn’t have to be all or nothing. Start slowly by swapping meat for a veg one night a week.

Flip it – Instead of meat, choose a veg or grain as the main event.

In this case we’ve chosen butternut squash as the main event. Butternut squash is substantial, has great texture and is delicious. Did I mention, nourishing? Below we’re creating a simple and easy butternut squash curry soup that can be made in minutes as a totally satisfying meal.

Other Ways Butternut Squash Can Replace Meat in Recipes

  • Replace mincemeat in Lasagne, Shepard’s Pie, or Cottage Pie.
  • Swap out some of the mincemeat in Macaroni Casserole with pureed butternut squash.
  • Make butternut squash “steaks” in a grill pan, serve it up with green beans and rice.
  • Instead of a roast, make a stuffed butternut squash. Stuff with quinoa, sage, hazelnuts, white beans and top with melted goat’s cheese.

 

Remember do the best you can when shifting your diet towards plant-based foods. Adding bits of meat and bits of cheese will help you get there and make the change agreeable to your body. Making drastic changes too quickly will have you binging at a burger joint by the end of the week! So, be kind to yourself as well

1 spoon butter or olive oil

½ small onion

200g  butternut squash, chopped in small pieces

1/2 tsp curry powder

Chili flakes, to taste (optional)

2 tbsp. orange juice

1 Sachet Complete by Juice Plus+ Vegetable Soup

300 ml 0,1% skimmed milk

Salt and pepper

A few pumpkin seeds (optional)

 

  1. Gently heat up a small saucepan, add your choice of fat with the onions.
  2. Heat for 30 seconds and then add the butternut squash along with curry powder, chili flakes and orange juice.
  3. Stir continuously on medium heat, so it doesn’t burn.
  4. When a fork goes through the squash easily, it’s ready.
  5. Add the Complete by Juice Plus+ Vegetable Soup powder and skimmed milk and heat for 1 minute stirring.
  6. Remove from the heat and blend with a stick blender.
  7. Pour in a bowl, top with pumpkin seeds.
  8. Enjoy!
