Recipe for Mum...

Our zesty lemon cake!


For the cake:

  • 300g apple sauce
  • 55g Complete by Juice Plus+ Vanilla
  • 80g spelt flour
  • 15g baking powder
  • Grated peel of an organic lemon

For the cake decoration:

  • 2 organic lemons
  • 2 tbsp lemon jam
  • 4 tbsp of water 



For the cake:  

  • Preheat oven to 190 degrees.
  • Mix all ingredients to create a smooth batter.
  • Pour the batter into greased springform.
  • Bake for 45 minutes.
  • Use a toothpick to check if it’s done.
  • So that the cake does not start to burn, cover it after 15 minutes.
  • Let the cake cool in the form.

For the decorations:

  • Wash 3 Lemons in hot water.
  • Cut into thin slices.
  • Warm the jam in a pan and add the water.
  • Caramelise the lemon slices briefly on both sides.
  • Use the lemon slices to decorate the cake.
  • Finally allow to cool completely
