The Ultimate Raw Food Dinner (ready in 5 minutes)

Low carb-ing it? I hear ya… I love pasta, but sometimes it doesn’t love me back. Here’s an alternative to pasta that is really fun to make and is amazingly delicious.

Zucchini Spaghetti with Sun Dried Tomato Pesto

Serves: 2       
Time: 5 Minutes


1)    Make the Sauce

Blend the following ingredients in a blender or with a hand blender.

  • 2 1/2 cups fresh tomatoes, chopped
  • 12 sun-dried tomatoes (in oil in the jar)
  • 1 Tablespoon olive oil
  • 2 small cloves garlic
  • 3 fresh dates, stone taken out
  • 2 tablespoons basil or parsley
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon sea salt

2) Make the Noodles

Take 6 zucchinis and either use a spiralizer or a mandoline to make them into spaghetti noodles. (Kids love doing this!!!)

3) Mix Together

Arrange noodles in bowls… pour the sauce over it… Voi-la!

Enjoy this great, healthy, fresh and easy to digest meal.
