7 Delicious Autumnal Soups You Need To Try

The evenings are drawing in, the temperature is falling, the leaves are starting to sprinkle the ground and there is a definite feeling of autumn in the air! Which means of course, it’s time to swap the light summer dishes for something more homely and warming.

Of course, the humble soup is just perfect for that. And can be made in so many different flavours, combinations and textures, which is why it’s just begging to be made this autumn! 

Try one of these soup recipes for a weekday supper or perhaps a weekend lunch and you won’t be sorry. Autumn cooking is here and remember you can make any of these and freeze them, for a later date!

 

Thai Or Chinese Traditional Noodles Soup With Chicken

 

A noodle soup is a classic comfort food and this Thai infusion adds a special twist.

The key players in this dish are lemongrass, garlic, ginger and chillies. Fry them off before adding some vegetable stock and coconut milk. Meanwhile cook rice noodles along with prawns or chicken.

Bring it altogether with Thai basil to finish.

The ginger gives this simple sweet potato soup a fabulous little punch and therefore turns it into something really quite different.

Fry some onion and garlic, before adding sweet potato chunks. Add fresh ginger and chilli, along with some vegetable stock. Let it simmer and reduce down, before blitzing with a hand blender.

Garnish with coriander.

 

 

Vegetable Soup

 

You can’t go wrong with a classic chunky vegetable soup! And better yet, this recipe uses the Complete by Juice Plus+ Vegetable Soup powder, which means a boost of extra goodness.

Sweat onions for five minutes with butter before adding cheese, broccoli, seasoning and some chicken stock.

Tomato soup - an absolute classic. The pesto gives this dish an Italian twist and certainly packs a punch of flavour.

Fry off some carrots, onions and garlic with seasoning and add a heap of delicious and juicy chopped beef tomatoes. Add tomato puree and a tablespoon of green pesto.

Let it all stew together before blitzing in a blender or with a hand blender. Season with basil.

 

 

Asparagus Cheese Soup With Potatoes And Leek.

 

The twist is more delicious green vegetables – we’re adding asparagus here. Mainly for its strength of flavour, which works well with the leek and potato.

Melt butter in a saucepan with onions and garlic, then add potato chunks and the leeks. Fry together before adding chicken or vegetable stock and then let it all simmer together.

Add bay leaves, thyme and seasoning for extra flavour. Add the asparagus and let it all boil together before blending.

 

 

Appetizing Bean Soup

 

Wholesome, filling and chunky, this is far from a light meal and something for a proper filling supper.

Sweat off some onion and garlic, before adding some chopped tomatoes. Add cannellini beans, white beans and black beans and stir.

Pop in chilli, oregano and vegetable stock and let everything blend together. In another pan or the oven, cook your sausage and add at the end.
