Spinach Pesto

Basil Spinach Pesto

Serves: 6 | Prep time: 5 minutes | Cook time: 5 minutes


  • 400g spinach (can also use basil, rocket or any greens!)*
  • 1 clove garlic
  • 40g pine nuts
  • 2 Tbsp. grated parmesan cheese
  • 1/2 tsp. salt
  • Pinch of pepper
  • 1/2 cup olive oil
  • 1/2 lemon

In the bowl of a food processor or blender add the spinach, garlic, pine nuts, cheese, salt and pepper and pulse until well combined, but not totally smooth. Slowly drizzle in the olive oil while pulsing. Add lemon juice, salt and pepper to taste.
