Breakfasts for Champions: Recipes From Juice Plus+® Customers
For those of us who wake up slowly, the whole idea of breakfast can sometimes sound daunting. These three recipes are all simple and portable. Bonus: They’re also delicious, healthy ways to start your day.
Perfect Pumpkin Muffins
Recipe submitted by Lydia Buschenfeldt of Fairfax, Virginia
This recipe is grain free, gluten free, dairy free, and soy free.
3/4 cup pumpkin puree (organic)
1 cup almond butter
1/3 cup grade B maple syrup (or raw honey)
1 tsp. cinnamon
1 tsp. baking soda
1/2 cup dairy-free mini chocolate chips (I use the Enjoy Life brand)
-Preheat oven to 325°F.
-Grease or spray your muffin pan with coconut oil or use muffin cups. (Mini-muffins are great too!)
-Combine all ingredients except chocolate chips.
-Gently fold in chocolate chips
-Bake for 15–17 minutes. (Do not overbake—they burn easily!)
Easy Egg & Spinach Breakfast

1/2 cup baby spinach
Salt, pepper, other seasoning to taste
-Spray cooking spray in a small deep bowl.
-Spread layer of spinach in bottom of bowl.
-Break egg carefully onto the nest of spinach.
-Use salt, pepper, or other seasonings on the egg.
-Cook in microwave for about 45 seconds for a light egg or longer for a medium or well-done egg. (Microwave times may vary).
This recipe provides lots of nutrients, is fast and easy, and—with a piece of toast and fruit or a hot drink—gives you a complete breakfast in no time!
Pumpkin Pie Smoothie

Makes four 12-oz servings.
2–3 cups unsweetened almond milk (depending on desired thickness)
3 cups pumpkin purée
1 ripe banana, sliced
2 tsp. vanilla extract
1 tbsp. pumpkin pie spice (more or less to your taste)
1 tbsp. pure maple syrup (more or less to your taste)
-Place ingredients in blender. Blend on high until smooth. If necessary, add water to thin.
