Quinoa Pancakes

Ingredients:
For the batter
+ 85g white quinoa, uncooked
+ 45g oatmeal
+ 15g baking powder
+ 3 tablespoons maple syrup
+ ½ teaspoon salt
+ 3 eggs
+ 1 tablespoon butter
+ 240ml milk (if the batter is too stiff, add more milk)
+ Rind from one lemon
+ 1 scoop Juice PLUS+ Complete Vanilla

For decoration:
(Depending on how big you make the pancakes, you’ll need more or less fruit.)
5 tangerines
5 Strawberries
8 Blueberries
Foodstuff

Directions:
Rinse the quinoa with cold water. Cook the quinoa for 12 minutes.
Mix all ingredients in a blender until it’s a very smooth batter.
Grease a small frying pan with little coconut oil and cook each pancake.
