Chickpea Zucchini Fritters

Euro 2016 Halftime Snack

Ingredients

  • 2 sachets of Juice PLUS+ Complete Vegetable Soup
  • 220 g chickpeas (drained)
  • 1 mid-size zucchini
  • 1 mid-size carrot
  • 1 red onion
  • 2 garlic clove
  • 1 teaspoon cumin
  • 2 eggs
  • 4 tablespoon flour
  • Salt and pepper to taste
  • Olive oil for frying

For the dip

  • 250 g low-fat curd
  • A pinch of salt
  • Pepper
  • A dash of lime juice
  • Parsley

Preparation

  1. Rinse the zucchini and carrot, then cut them into thin slices. s
  2. Chop the garlic and finely cut the onion into thin rings
  3. In a separate bowl, mix the eggs, flour, cumin and Juice PLUS+ Complete Vegetable Soup.
  4. Add the vegetables and then salt and pepper to taste.
  5. Using your hands, make flat balls and fry in olive oil
  6. For the dip, just mix all the ingredients and serve with the fritters.
  7. Enjoy
