Pumpkins work brilliantly stuffed with lightly spiced rice or even cous cous. Scoop out the pumpkin seeds and stuff with your chosen mixture, or slice up the pumpkin to oven roast open.

Make sure you add a punch of colour like cranberries and pistachios. A sprinkling of crunchy walnuts and feta is a great addition.

 

 

Homemade pesto is wholly satisfying – so why not try stepping away from the normal basil pesto and try pumpkin?

All you need to do is roast the pumpkin until soft and blitz in a food processor with some olive oil, salt, pepper, almonds, basil and a hard cheese if you wish.
