6 Soothing Summer Ice-Lolly Recipes!

 

Just in time for the kids breaking up from school, these summer ice-lolly recipes are perfect for a quick refreshing treat.

All you need to get started are 4 to 6 ice-lolly moulds, which you can easily get from many local supermarkets.

It doesn’t matter the size or the shape, as long as they can fit in your freezer!

This one requires a little pre prep, but is worth it! 

Whizz up some strawberries in a food processor or blender, with some Greek yoghurt and honey. Once blended, simply add to your ice-lolly moulds and pop in the freezer! 

A great thing about this recipe is you can actually use different berries to suit your mood.

You could also blend blueberries, raspberries or even blackberries to make your own yoghurt and fruit combination!

Simply juice the blood oranges – you can do this manually or in a juicer depending on your equipment! 

Add cloudy lemonade to the juice, along with a squeeze of honey and the zest of the oranges. Ensure well mixed and pour into your moulds, and leave to freeze. 

The most refreshing lemonade treat, with a gorgeous deep red colour!

Blend fresh mango in a food processor until smooth and add a squeeze of honey. 

To the mango, also add a can of coconut milk, vanilla essence and desiccated coconut. 

Pour into the moulds and let to set, for a delicious tropical mouthful.

Add honeydew melons to a blender, along with the zest of two lemons and apple juice. 

Whizz together until smooth and then sieve to get rid of any bits. Simply add to the moulds and freeze.

The ‘superfood’ of the moment and packing a big berry punch, this acai ice pop is the perfect cooling refresher. 

Simply find yourself a pack of frozen acai juice and cool the pack in hot water for a short time. 

Squeeze into a blender and add a handful of blueberries, coconut yoghurt and a squeeze of honey. Blend and then pour into your ice-lolly moulds and leave to freeze.

Nothing beats a cooling summer berry mix with vanilla ice cream, so why not create your very own summer berry ice pop? 

Simply grab strawberries, blueberries, blackberries and pitted cherries and pop into a blender. 

Add some Greek yoghurt for creaminess, or coconut yoghurt if vegan, and a squeeze of date syrup. Whizz it up until it’s thick and creamy and add to your moulds. 

They will freeze in a gorgeous deep berry colour, with pips flecked in the ice.
